These got the big thumbs up from the whole family. I love Chocolate Chip cookies and these "guilt free" ones are perfect. We ate them warm and then wrapped up a couple for school lunches the next day. Like all my favourite recipes these are super quick to make. I doubled up the recipe below and it made 14x 6cm cookies. They turned out so chewy and gooey - YUM!

Serving: 1 I Prep time: 10 minutes I Total time: 40 minutes
1/3 cup coconut flour
1/3 cup dark chocolate chips
1 tsp vanilla extract
1/4 cup of raw honey (I used coconut syrup)
1/4 cup of coconut oil
Pinch of salt
Preheat oven to 350 degrees
Prepare baking paper on cooking tray.
Mix the coconut flour, salt, eggs, coconut oil, sweetener and vanilla extract together with a whisk.
Keep mixing as the consistence of the coconut flour will change and thicken. If mixture is still to runny add some more coconut flour.
Add in chocolate chips and evenly distribute through mixture.
Take a tablespoon of mixture and place on baking tray. Mould desired shape with hands.
Place cookies in oven and sook for 10-15 minutes depending on the texture you desire.
