Bliss balls are a superb choice for the afternoon pick-me-up or after dinner sweet treat.Bliss balls are full of fibre, minerals and vitamins and these bite-size morsels are a good way of incorporating seeds and nuts into your diet. They're dairy-free and refined sugar-free and many are gluten-free too.

Serving: 1 I Prep time: 20 minutes I Total time: 60 minutes

INGREDIENTS

12 Medjool dates

1 cup almond meal

1/2 cup coconut + 1/3 cup for rolling

1/3 cup coconut oil

1/3 cup cacao powder

1 tbsp chia seeds

DIRECTIONS

Place dates in a bowl of water for 1 hour to soften, then drain water and remove any seeds.

In food processor or blender process dates, almond meal, shredded coconut, cocnut oil, cacao powder and chia seeds until mixture is blended and coming together.

Let sit for 20 minutes for chia seeds to soften.

Place remaining coconut in bowl.

Roll mixture into small tbsp. size balls and roll in the coconut.

Store in an airtight container and enjoy.
