SWEET POTATO, BACON & APPLE HASH
This is my daughters favourite breakfast especially with a fried or poached egg on top. It really doesn't take very long to make, especially if I prepare the sweet potato cubes the night before. I do really like making one large breakfast that can be scooped up into 6 plates to feed my family.

Serving: 4 I Prep time: 10 minutes I Total time: 25 minutes
3 large sweet potatoes
6 slices of bacon
1 onion (optional)
2 cups of spinach or kale
1 tbsp oil ( I use coconut for this)
Pepper and salt to taste
Peel and slice onion ( I do not use onion)
Grate sweet potatoes and cut into cubes.
Grate apples and cut into cubes.
Slice bacon into thin strips.
Place onion and bacon in fry pan and cook for a few minutes.
Add sweet potato and keep it moving while it cooks.
Add apple and keep stirring until it cook.
Once sweet potato almost tender throw in kale or spinach.
Once kale or spinach is tender, this dish is ready.
