BERRY CHIA SEED PUDDING

Chia Seed Pudding is a nourishing and versatile breakfast.. So very quick and easy to prepare the pudding and then you can add in all the things you love. When I have a busy morning I make mine up the night before so it's all ready to go.

Serving: 1 I Prep time: 3 minutes I Total time: 5  minutes 

 

INGREDIENTS

 

1/4 cup coconut milk

 

2 tbsp chia seeds

 

1/4 cup of mixed berries

 

1/2 tsp vanilla extract

 

2 tbsp of natural sweetener (if required) e.g agave / honey / maple syrup

 

2 tbsp. of nuts / I choose almond slivers and pecan nuts

 

1 tbsp. of flaxseeds

 

2 tbsp. of goji berries

 

1 tbsp. coconut flakes

 

1 cup of fresh fruit / I chose pineapple, kiwifruit and papaya

 

DIRECTIONS

 

Place coconut milk, chia seeds, mixed berries, vanilla extract and sweetener in a bowl and whisk together, place in refrigerator for 4 hours.

 

Place set pudding into a mason jar and decorate with the nuts, seeds and fruit.
