SMOKED SALMON, WITH SWEET POTATO AND SEAWEED SALAD


A bit of everything here, but heaps of goodness and totally nourishing. Scrambled eggs with spinach, smoked salmon, mixed leaf salad, with wakeme sprinkles, kimchi, avocado, tomato and sweet potato...

Serving: 1 I Prep time: 10 minutes I Total time: 20 minutes

INGREDIENTS

2 big handfuls of salad Leaves

2 eggs

1 tbsp olive oil

1 tsp butter

1/2 cup spinach

I sweet potato

3 cherry tomatoes

1 tbsp kimchi

2 slices of smoked salmon

1 Tbsp wakeme seaweed sprinkles

DIRECTIONS

[if gte IE 8][endif]1. Grate Sweet potato, cut into small pieces and placed in pot with water to boil. Boil until tender and then mash it with butter.

2. Crack eggs into bowl and whisk them. Heat olive oil in fry pan and place eggs mixture in pan and mix the eggs until the scramble. Place spinach on top whilst still on heat and allow them to wilt and mix through the egg.

3. Place on Dinner Plate, Mixed Salad Greens sprinkled with Wakeme Seaweed, Kim Chi, Avocado and Cherry Tomatoes.

4. Add Scrambled Egg, Sweet Potato Mash and Smoked Salmon to plate..

5. Make it beautiful :)
