FIG & EGG SALAD

I LOVE LOVE LOVE salads.. It's like my creative time each day. I start with a white bowl and then rummage throughout the pantry and fridge plucking everything I feel like on the day... One of my fridge "must haves" is boiled eggs.. We all love them and they are without a doubt the best ever snack!

 

Gluten Free l Grain Free l Refined Sugar Free l Paleo l Vegetarian

 

Serving: 1 I Prep time: 5 minutes I Total time: 5  minutes 

 

 

INGREDIENTS

 

2 big handfuls of spinach leaves

 

1 tbsp of sundried tomatos

 

1 handful of raw cashew nuts

 

2 boiled eggs

 

1 big handful of Blueberries

 

3 cherry tomatos

 

1/2 avocado

 

Sprinkle of Coconut Amino's

 

 

 

DIRECTIONS

 

1. Place handful of spinach in bowl

 

2. Carefully, colourfully and creatively place all other ingredients on top of spinach

 

3. Make it beautiful

 

4. Sprinkle with Coconut Aminos
